
During Lent we’re keeping our Fridays meatless around here and I thought I’d share one of my favorite kid and husband-approved meals lately!
I totally didn’t know this was a thing, but apparently you can buy cheddar cheese powder that has only cheese in it! And I found an amazing swap for regular macaroni pasta on Amazon with no weird flavor/texture, but it’s made of quinoa and brown rice! My mind is kind of blown haha. Here it is:

This tastes exactly like the mac n’ cheese my kids love from the carton but it has no fake ingredients in it, is gluten-free, and has protein! I made my recipe pretty light, but you can always add more cheese/milk/butter according to your taste. Hope you enjoy!
Healthy GF Mac N’ Cheese
Ingredients:
- 3 cups GoGo Organic Red and White Quinoa Macaroni (or any macaroni)
- 5-6 Tablespoons Cheddar Cheese Powder (I like Anthony’s brand)
- 2 Tablespoons butter
- 1/4 Cup of milk
Method:
- Cook your macaroni according to preference, then reserve 1/4 Cup of your starchy pasta water in a separate mixing bowl and drain the rest.
- Add cheese powder, butter, and milk to still-hot reserved pasta water and whisk until smooth.
- Pour cheesy mixture into warm cooked pasta, and stir until well-combined.
Serve while warm and enjoy! Makes about 3-4 servings.
