I’m not gonna go on and on explaining how much this recipe has converted even the pickiest eaters in our household, or how it’s egg-free (with 2 options to make it so!) and yet still perfectly crispy at the edges. I won’t wax poetic on the healthy attributes of this waffle with a half ratio of whole wheat which makes it a perfectly acceptable and balanced breakfast (in my humble opinion). I won’t even begin to mention the heavenly and non-negotiable finishing touches of extra [salted] butter and powdered sugar on top that further take this recipe into comfort-food-level perfection. No, I won’t go into those details today because I know you, dear readers, are purely interested in the recipe – that I’ve perfected after testing and tweaking until it met and fulfilled my family’s every requirement in a breakfast waffle. Just know that this recipe holds in it all hopes and dreams for a great start to your day and I share it with you happily; which is the next best thing to my being able to visit you in your own home, your own kitchen, and being able to make these for you piping hot – with maybe a creamy hot cup of coffee to go with it. <3
Bianca’s Banana Berry Waffles
Dry Ingredients:
- 2 Cups Flour ( 1 cup white all-purpose + 1 cup spelt/ white whole wheat/ regular whole wheat/ or more all-purpose)
- 1 Tablespoon Baking Powder
- 2 Tablespoons white sugar + 2 Tablespoons brown sugar
- 2 Tablespoons egg replacer *or* corn starch
- 1 Tablespoon flaxseed meal (can omit if you don’t have any)
Wet Ingredients:
- 1-2 ripe bananas (I like using 2)
- 6 Tablespoons melted salted butter
- 1 & 1/2 Cup milk of choice (I just use 1% lactaid)
- 2 teaspoons vanilla extract
- 1 Cup of mixed berries (Any will do!)
*Optional mix-ins:*
- 1/2 Cup of plain yogurt – you can add this in addition to or even sub for one of the bananas!
- 1/2 to 1 Cup almond flour (adds extra protein and you can’t even taste it!)
Method:
- Add dry ingredients to a mixing bowl and whisk well. Set aside.
- Blend all wet ingredients EXCEPT berries.
- Add wet blended ingredients into the dry and whisk, being careful not to overmix.
- Fold in the mixed berries. I usually use frozen but any type of berries frozen or fresh will work!
- Spoon batter 1/4 cup or so at a time onto the middle of your waffle iron (I use and love our Cuisinart Round iron). Experiment with the setting you love most – for me its about a 2 to 2 & 1/2 so its a little crispy and browned but not too brown, you know? 😉
- Butter waffles immediately and dust with powdered sugar for the ultimate treat.
