Happy November, friends! And Happy Thanksgiving Week!
I’ve been more active on Instagram lately, but I haven’t forgotten my blog! Some people say that blogs are dead, but I think they’re wrong. Sometimes you have thoughts that can’t be shared in an IG caption, and blogs are great places (that you own, unlike content on IG!) to put original content. So there you have it, I’m not going anywhere, even if I don’t update as often as I’d like. Believe me, it isn’t because I don’t have ideas or thoughts to share! Oh that there were more hours in the day. 😉 Now on to our present topic:
Granola Butter! This recipe basically consists of how I turned my Stovetop Granola into the most amazing Peanut Butter alternative ever. Think more along the lines of cookie butter but more texture and more health. 😀 It’s heavenly drizzled on yogurt and berries!
Ingredients:
- Easiest and most deliciously simple Stovetop Granola in the land (link to my blog post/YouTube video in which my kids and I share our tried-and-true recipe) (FYI I also added some hemp seeds to this batch for extra protein)
- Olive Oil
- Maple Syrup
- Extra cinnamon/nutmeg/sea salt/vanilla etc.
- *optional* freeze-dried strawberries
Method:
- Start by making your batch of Stovetop Granola and allowing it to set/cool.
- Get your food processor ready and pour in your granola.
- Blend on high, and allow the granola to break down for a bit.
- Drizzle in your olive oil slowly, according to how runny you want it.
- Check for your desired consistency and taste. Feel free to stop here depending on taste and also how seasoned your original granola was already.
- Drizzle in some maple syrup to taste (I found it really upped the flavor!)
- Sprinkle in some extra cinnamon, vanilla, nutmeg, or pumpkin pie spice if you like, and even a pinch of salt if needed (I usually add enough to the original granola because I’m a huge fan of sweet-salty!)
- *Totally optional step* I’ve been adding a small handful of freeze-dried strawberries (I get mine at Trader Joe’s) because even though the finished product won’t really taste of strawberry, I find that it brightens the flavor a bit, which I like.
- Store in the fridge if you don’t eat it all in one day (you can always bring it back to room temp so it’s spreadable).
